How much do grades matter when pursuing engineering?

Do all grades matter or just math and science grades? I know most engineering is mostly math and science and I LOVE math and science. I want to be an Engineer when I grow up

While the math and science grades can be enough to get you where you want to go, often your GPA will be used as a filter when looking at your admission file, so other courses could count against you. Perhaps you can find a school that has enough of a technical emphasis that there will be fewer other courses to worry about. Good luck!
